When cafe owner Nancy Johnston needed to pivot the Bank from a traditional sit-down restaurant to a grab-n-go gourmet food service in the wake of Covid, she needed a reliable in-house dessert to round out the menu. She chose her tried and true carrot cake; a staple in the family that she knew people would enjoy. The cake was an instant hit among both her regular clientele and tourists, and it wasn’t long before it was crowned Best Carrot Cake Ever, skyrocketing to become her all-time biggest seller.
The humble cake is made from scratch and features all of the hallmarks of a great carrot cake, from the freshness of the carrots to the crunch of the walnuts, the zest of the pineapple and topped off by the tangy sweetness of the cream cheese icing. Johnston’s recipe is raisin-free, which she claims is anecdotally the most contentious ingredient among carrot cake lovers.
